注射前，将已配制好的盐水倒入盐水箱中，把肉放置在工作台上，启动盐水泵，手持盐水注射部位，在将注射针刺入肉中的同时打开注射的开关，拔出注射针时应立即关闭注射针。让后根据肉块的大小，按工艺要求的注射孔距，移动注射针至肉块另一位置，进行第二次注射。如次循环往复，直至注射结束。
